Easy AF Granola

This super simple granola is vegan & free from refined sugar, gluten, diary & wheat*

As most of the energy involved in this recipe is spent just checking to see if it is done, Tarron and I tend to double up to make this – when one of us is in the kitchen keeping an eye on the dinner anyway – so no energy is wasted!

What do I need?

  • 3 cups gluten-free oats
  • 2 cups of nuts & seeds of your choice {we used walnuts, flaked almonds, sunflower seeds, pumpkin seeds, flaxseed and linseed}
  • 1/2 cup of softened coconut oil
  • 1/2 cup of natural sweetener of your choice {we used 50% coconut sugar and 50% maple syrup}
  • 1/2 cup of coconut {we used a coconut chips and desiccated coconut mix}
  • 3/4 cup of dried fruit of your choice {we used raisins}
  • Additional flavours of your choice {we used a tsp cinnamon}
  • And a large pinch of Himalayan pink salt

What should i do?

  1. Pre-heat your oven to around 170℃ and line a couple of baking trays with foil, greaseproof paper or non-stick silicon sheets.
  2. Mix oats, nuts, seeds, oil, sweetner, coconut, flavours and salt in a large bowl until you have an even mixture.
  3. Press mixture into your pre-prepared baking trays and place in the oven, baking for around 20 minutes (or until coconut and nuts appear lightly toasted).
  4. Cool, break into little nuggets, add dried fruit and put in an airtight jar.
  5. Store for easy peasy breakfasts and cheeky nibbles.

This recipe can be changed up A LOT. It’s different everytime I make it. Recently we’ve been using cinnamon and walnuts for a more warming flavour, but you can also mix it up with lucuma, maca, chocolate, cranberries, freeze dried raspberries, banana chips, extra coconut sugar and salt, vegan chocolate chips (finely chopped dark chocolate OMbar buttons work beautifully), apricots… ergh now I’m hungry.
